Jean-Paul Vincken, Director and Chief Scientist, Food Chemistry Laboratory, Wageningen University, The Netherlands. Member of the European Food Technology Education Committee and member of the International Doctorate Review Board; Professor Vincken's research focuses on the analysis, modification (eg, oxidation, prenylation) and properties of phytochemicals. Nature research focuses on establishing structure-activity relationships between purified phytochemicals and health (estrogen potential, bioavailability), antibacterial activity, color and taste (mainly bitter and astringent).
